I love this. And have considered it. My grandfather did this for years. Unfortunately I no longer have him for a resource. How much of the stumps and roots etc do you need to removed before seeding grass?
Go do it. Zero. The cows just walk around them (I have other land without stumps for winter feed production)

You can seed grass by just unrolling hay bales, so just cut your stumps close to the ground so you can drive over them
