How do you set a default zap?
On which client? Amethyst only offers a 1k zap default for now

There are no settings for it on Amethyst yet. Can't comment on other clients because I mainly use Amethyst for my Nostring
In Damus, under setting, there is a default zap amount field. What I’ve learned is that if you set it 75, that’s the amount that I can zap (can’t change) and that’s the amount that someone can Zap me (can’t be changed by the sender). Click my zap button and see if it defaults to 75 and if you can change it. You don’t have to send me anything, just test it.
As for BTC Fiend, when I select his top button under his profile, it defaulted to 42 sats and I couldn’t change the amount either.

Default is because of strike. It immediately converts sats to shitcoin, so it won't allow sends less than .01¢ USD.
