Is there a substack replacement on nostr yet? One that allows a subscription model? I think that would be pretty important.

For substack nostr replacement, there's blogstack.io and yakihonne and habla.news and others on the way, but none have yet included a subscription model (where does it get accessed? DMs?). Subscriptions via Lightning piece seems doable now.

You can zap the authors any time and any amount you want. What need is there for a subscription? To force you to pay when you can already do it willingly?
