Why do most bitcoin lightning wallets (like those of Satoshi and Munn) not support private and public key login methods?
Also, why do they use the email format as a wallet?

These are custodial wallet, and both are doing what exactly they are supposed to do.
If you need one that utilize private seeds login, You may consider using non-custodial ones. Mutiny or ZEUS is a good example.
Which are good between them?
If you are beginners, You may stick with the custodial for moments.
Mutiny may be good for beginners as it has integrated fedimint support, allowing sending or receiving money in lower fee before you start using on-chain. You could use on-chain one if you do not trust on fedimint. However, You will need to pay for the set up fee which is around 15K for opening channel.
ZEUS meanwhile suits well for LND or LN node owners. You could also use it without having LN node as it comes with embedded LND. As usual, You will need to pay for the set up fee which is around 15K for opening channel.
Both wallet will suggest you to have your first receive balance to be atleast around 100K sats, and that is for the set up fee for lightning.
Thank you
