Whenever I create a token, it's always v3 (best would it to be able to create both token formats).

New format requires that the mint uses new format of keysets as well (hex encoded). Minibits mint has mit yet migrated to new keysets.

In the meantime you can try e.g. stablenut.umint.cash

Btw, Amethyst, the Nostr client I'm using, now also supports V4 tokens as well. You can just paste the token as text and Amethyst lets you redeem it directly to your Lightning address.

Interesting that stablenut.umint.cash also supports USD. How would that work?
