It just occurred to me that there may be a nefarious reason as to why Thai banking apps refuse to operate over VPNs.

They said it's for your safety. What if they are saying the truth? What if they don't have end to end encryption or compromised encryption to allow the state to eavesdrop so they minimise the impact by operating over cellular only - which is exactly the same thing LINE did in the early 2010's.
