What would you suggest to be used as a proof of funding, so in cases of “all-or-nothing” scheme or if it is some kind of investment with some form of return (interest or equity, doesn’t really matter) the payer gets his/hers money back

Sure! Although some investors might want interest… but technically speaking is the zap events good enough to not be faked or maybe the preimage is something that could be used. Or additional notice should be delivered to beneficiary and investor…
