Apple’s App review takes a very long time. Even for beta testing.
Do they have developers reviewing the code line by line with every update? For all the apps in the AppStore?

Yeah, they are definitely taking their time.
Yeah I think Google play too, takes a while but depends on app, like I use obfuscation too so it slows down review time and sometimes need to provide symbols
What does obfuscation mean? What do you men need to provide symbols?
Variables, methods etc. all obfuscated so that the code loos like jargon.
inspect any meta platforms site i.e. Instagram or Facebook and you will see what I mean
You would need to provide a symbol table that they can use to remove the obfuscation and review the code
