Made a little batch of elderberry juice. This is 2lbs worth I got from a local farmer. I raked the berries with a fork, then simmered them in a cup of water until the berries looked spent. Then I strained it into a pot, added some ginger, cloves and cinnamon, and let it all simmer for about half an hour. At this point you could add sugar to simmer down into a syrup, but I poured it into an ice cube tray to freeze. It's easy to chuck a few into a blender for a smoothie or to heat one up in hot water for tea. It's also great in coffee (see my previous post).
