Cover pork loin with enough equal parts salt and sugar to coat completely. Refrigerator for 24 hours.

Rinse, drain and pat dry.

Mix garlic powder, thyme, rosemary, fresh ground white pepper, Hungarian paprika.

Coat the pork loin completely. I rub it in.

Place on a drying rack in the refrigerator for 3 to 4 weeks.

My variation

Place in smoker on very low heat for 8 hours.

I use green oak wood.
