My backup process:

1. Everything important to an SSD

2. Everything on that SSD to Nextcloud on my server

3. Backup my server to that same SSD again (but now it's all encrypted)

4. Send server backup to cloud storage

I use an off site NAS backup and an encrypted cloud backup.
