I prefer to get those vegies melted down into the sauce, this is what italians told me to do and I agree totally as this makes more pleasant texture for a sauce when you don't feel that celery and carrot at all
Another bolognese but with 1kg each of lamb and deer mince. Did the onions carrot and celery separately and added in last hour of cooking so they held their shape.
