Can someone explain how "channels" work in nostr ?

In my Amethysts DM, I can see that I'm part of the "Nostr channel" and "Amethyst users channel" but I can't figure out how it works exactly.

Can it be private with only certain people in it or is it just a public thing with anyone able to post notes ?
