As a vendor you can set whatever price you want & in whatever currency.
The reality is that most of us still operate in a fiat world & that drives the prices that we set. Even if we set prices in sats, it's done based on the current purchasing power of those sats.
To pretend that Bitcoin's relative purchasing power doesn't matter is intellectually dishonest. You're kidding yourself to think that people don't convert the sat amount into a fiat equivalent.
You may not like it but that is the reality that we're in.
The other consideration is that Nostr is a gateway to Bitcoin. This may be the first time that people are using Bitcoin & it takes a while to become familiar with the concept of sats (among other things like acquiring & using it).
