You could use ghee what whould give a nicer sear, can always baste with butter later

yeah clarified butter 🧈 is an other name for ghee. I am making my own clarified butter. before taking out the meat I always put a little bit normal butter to the pan so it get an additional roasted flavor πŸ˜‹

Fair there is a slight difference where you brown the butter before starting for ghee
