it’s absolutely delicious. my mom taught me to make a persian stew (khoresh) with bison meat, and it’s incredible.
my favourite was ghormeh sabzi then moved on to bademjan throughout the years.
The city that I grew up in has a vegan persian restaurant now. It was surprisingly good.
I used to order bison burgers. Tasty and lean.
