Dark modes really bother my eyes. Anyone else have this issue? I see such a big love for it in apps/sites and can't understand it.

Yes, dark mode is way worse for me too. I see the letters moving when scrolling in dark mode and it hurts my eyes if I use too much in dark theme
They do seem to echo for me as I scroll in dark mode
I was light mode only for a long time, now use dim (grey) modes more. Black with white text is too hard to read for me. Too much ghosting when it moves.
