Why am i able to create npub from btc txid (hex) using Nip-05? Do i own all those npub keys?

No, because you don't have the corresponding nsec.

Also it's NIP-19, NIP-05 is for the email-like identifiers. See: https://github.com/nostr-protocol/nips/blob/master/19.md

No. It's a one-way operation (cryptographic function).
