Both cool and not cool at the same time. People with privacy concerns should probably consider multiple vendors at least place separate orders with some time in between.
No, not cool that they do the tracking. It is cool that the tracking shows clearly that a lot of seedsigners are being built.
It is also very interesting from a security perspective. One of the selling points of seedsigner is building it yourself keeps you from being outed like ledger buyers. Clearly the connections can still be made if you order in a single order from a single vendor. It still might be less work to obfuscate than a pseudonym and shipping to your office depending on your situation.
