Poolish:

300ml water

5 gram honey

3 gram yeast

300 gram flour

Mix with a spoon

Rest 16-24 hours in fridge, no air.

Dough:

Take Poolish,

Add 700 gram flour

350-380ml water

25 gram salt

Kneed for 15 minutes by hand.

Another 12-16 hours in fridge

Form 6 balls 265 grams each

Back to fridge

2 hours before cooking move out of fridge.
