Read a post yesterday by someone who said trying to get a Lightning channel right now is like trying to get an Uber right after a concert.

It does fit indeed. And closing a channel sounds like 'allright, I've still 10 miles to go but hey, let's jump out and do that by foot'
I will have an amendment to that:
Is not about getting a new channel, but getting funds back from a FC (force closed) channel...
Opening a channel is easier, you just have to push the higher fee. For a FC is different.
Analogy:
You get the Uber when you pay a higher fee, because you really want to get the fuck out of that party with a nice girl and you want to get as fast as you can at home with her...
Is not the same as you got caught without pants and you have to GTFO ASAP, but you have no more money, because you are without your pants...
Are two different situations around that uber...
