For what? I host an instance for personal use and use a few of the plugins, and it's great for that

Its great to have an instance online sonewhere else and not at home. It can be for backup reasons, for teams, if you don't want to use Cloudflare tunnels which you shouldn't use anyway.

Yeah, I run it on a very remote server. Remember, if all your backups are in one place, you don't have backups. You have *copies*.
