The US health system would prefer you not listen to those people because the medical journals and studies only REWARD those that fall into their narrative (that all foods are "OK" in moderation except for meat and eggs and dairy which they believe should be limited/restricted or even eliminated)
The WHO (world health organization) would prefer you think of a meat and non-starchy veg way of eating is not healthy because it eliminates other food groups and they still believe the long-debunked myth that saturated animal fat clogs arteries.
They have been doing this by design for years.
Studies that link to these old fashioned and demonstrably false narratives are paid for by food companies and drug companies. Almost all of these studies are cohort/questionnaire type methodology where people have to rely on their memory about what they ate a week ago, 30 days ago, 3 years ago...and people can lie or forget. Also a lot of these types of studies that aim to prove animal foods are harmful also correlate people eating McDonals or Pizza Hut as "meat eaters". Meat alone without all the bread and fries and Coke is healthy and does not cause the issues these studies aim to hypothesize they do.
Real studies that follow controlled clinical trial methodology are hard to fund because most of the doctors and scientists who want to run these studies have to get them done with self-funded seed investments or with fundraisers, that have no links with Big Food or Big Pharma.
Follow the money.
