My stack is KYC. If I start over should I get a separate coldcard from the one I have currently?

You can use the BIP-85 feature from the ColdCard for this, you would only need 1 seed which can generate thousands of child seeds. https://bip85.com/. When doing this you probably also want to use a passphrase for the main seed.
