I agree but you can get a jmp.chat number, pay in bitcoin, and either keep it for North American calling or cancel service
I think there's no true KYC in that pipeline
You might also be able to do something similar with Google's VOIP/messaging services for free; I'm not sure whether there's true KYC there either

If you want privacy u should probably not use a cell phone.

I think a cell phone (the device) is good and useful. I keep mine in a faraday bag and use it for navigation (in airplane mode, which still allows it to receive GPS signal). It also has emergency connectivity to the cell phone network (such as 911 in the US). It can record audio/video in case of an accident. It can allow me to receive FM Radio or use the magnetic sensor as a compass. I think to get something like that range of capabilities a lower-priced cell-phone is one of the most attractive options.
That said, I agree with rejecting the modern always-on always-monitored lifestyle. Somehow people survived 20+ years ago.
All my calling/SMS I do over IP and thus from a laptop, using secure messengers when possible. I'm a little less screen-addicted working from a laptop rather than a handheld device that is always with me. I also like being "unavailable" without having to think about it (eg while driving or even just going for a walk). I suspect but don't know for sure that my life is much more secure/private.
Having cut the cell phone umbiIical, I am in the process of de-Googling my laptop usage and moving to FOSS & related services.
