I can't bring myself to stick with gnome, I tend to gravitate towards kde. Do you usually leave it stock?

Pretty much vanilla yeah. I enable the minimize+maximize buttons and that's about it. The few extensions I use don't alter the UI experience.

indeed, and Debian even more so at the expense of fresh packages.
