When I installed Ubuntu it gave me the option to install the whole thing as an encrypted volume. It just prompts you to decrypt at each power up before login

yeah, I didnt get that option. And I dont want to go back and have to re-do everything. I was hoping for something like Microsoft's Bitlocker. Where you can encrypt after the fact.

What is with VeraCrypt? But I'm not sure and never used it for that.

What district? Full disk encryption isn't always the most obvious option during install. Usually just a single check box overlooked. I would consider it very weird to not have it as an option in a modern distro.
