they've always been extremely clear about what they do and available data squares with it

Proton is sus. But there's not really any alternative.

I recently added Simple Login. Some websites reject the alias, some don't. Nevertheless, feels good not giving my proton email out.

If the website rejects Proton/SimpleLogin alias, then you know they are sus for sure.

Can you sign up for proton over Tor without JavaScript or are they trying to make people use less secure browser setups?

You couldn't sign up through Tor a year ago, I don't know if they fixed it now. Proton has always been very sus.
