As someone who has to pay close attention to food prices - I’ve noticed a bit of a sling shot up in mid tier restaurant prices recently. (Think applebee’s but mom & pop.)

I suspect they tried some shenanigans - smaller portions, cheaper ingredients, opening later/closing earlier and generally cutting corners - and after that showed little affect they’re in panic mode.

It’s “go big or go home” time.

Smaller towns full of wage workers can’t handle price increases.

This is exactly my experience. Little local places that used to give free cookies or drinks, or kept their sandwiches under $10 for the entirety of COVID suddenly jacked up their prices like 25-50% over the last 6-12months. In these cases, I think they were just eating the costs since they don't usually have to adapt that quickly, and now they realized they had to do something.
