Maybe a dumb question. But, when you just put your Nostr private key in these apps to log into or create an account...

Are we just trusting they don't save this data?

Because it feels like yolo'ing my keys to chance and one day I'll wake up hacked or something.

Yes, you are just trusting them. There are apps or clients that keep your nsec private when creating an account or signing an event. I'm sure someone will suggest one.
