Ideas for storing and using lemon balm? I have a bad habit of planting things and thinking I will remember what they are next year. I thought all of this around our fountain was different mints, but the largest one here in the back appears to be lemon balm. I didn’t harvest and use these last year. I want to do better this year. There is also spearmint, chocolate mint, and I one other flavored mint I can’t remember. 🤷‍♀️

I've had the same problem with not getting around to it. I meant to harvest my mint last year, but never did.

I'd think drying it is best and you can use it as a tea or blended with other herbs for a tea.

I don't know what is best, air dry, dehydrated, or freeze dried. I was going to try freeze drying, but I don't know if the vacuum process would suck all of the oils out of it and make it tasteless. You might be better off just air drying it.

Seems like I’ve read something about air drying being better for herbs. Thanks!
