Good question lol, this was taken a few minutes after I scooped the honey in, and it was quite thick so it held them down for an hour or so. Then when they surfaced I flipped the jar over. Apparently that's how to keep them submerged best as possible. Today the honey is slightly more viscous and I just flip the jar every couple of hours. Rotating the jar also helps the flavor mix. Your honey will probably be more viscous if the fermentation process has begun. Have you given it a taste test yet? I think I'll wait at least a week before testing mine

Fermentation started a few hours after I set it up. It was super active during the first week. I burped it twice a day and flipped the jar afterwards to keep the cloves glazed.

They are a bit smaller now and have a nice caramelized color but I havent tried them yet. I want to wait at least 3 months.
