Beef and Broccoli
- 1 clove of garlic, crushed
- 1 tbsp rice wine vinegar
- 1 tbsp soy sauce
- generous 1/2 cup beef stock
- 225g broccoli florets
- 2 tbsp cornstarch
- 2 tbsp avocado oil
- 1 lb rump steak, finely sliced
- 1 tsp salt
1. Put the steak in a container
2. Combine 1tbsp cornstarch w/ wine & soy sauce, stirring into the meat and marinating half an hour
3. Heat oil w/ salt & garlic and fry until garlic is slightly browned
4. Add steak & marinade, stir fry 4 minutes
5. Add the broccoli, stir fry 3 minutes
6. Add stock, bring to boil, cover and simmer approx 5 minutes until broccoli is just soft but still crisp
7. Mix the rest of the corn starch with a little water and mix into the sauce
8. Simmer, stirring until the sauce clears and becomes thick
