don't wait on steamos, it will always be handheld first anyway, bazzite is a great choice though.
i set up bazzite on a pc with an older gpu, it was really easy to set up with battlenet, steam, and minecraft.
i couldn't figure out how to set up a minecraft server on it, though im sure it's possible ( and i should probably be playing Luanti/VoxeLibre instead :p )
