I worked as a line cook for a good while, and also sold knives for a bit. Also oscillate between sharpening my knives so i can shave with them and then letting them go, so i appreciate good slicing when I see it.

Also new knives are great but keeping them sharp when they're no longer new is even greater. I 🧡 my Sharp Pebble two grit sharpening stone, if you're ever looking for a good one. Has a nice slip proof rubber boot, and comes with a fixing stone to keep it flat. Few minutes with that thing and my knives are literally razor sharp.
