Solution: Don't close the door when smoke erupts. Don't try to extinguish the fire but open the oven door and ventilation fully, then open 1-2 windows in the room where the oven sits and the smoke will be sucked out of the ventilation shaft instead.

Usually when it's smoking you know it's got heat and fuel, just lacking oxygen.
Smoke colour is also a good signifier
