Depends what you are distilling and for what purpose. If you are distilling alcohol from a sugar wash to get vodka-like neutral alcohol, then charcoal will clean up the flavor somewhat. If you are distilling a corn mash, skip the charcoal to keep the flavor but make sure to cut the heads and tails well to avoid those crappy flavors.
