Does anybody use Bitcoin core's built in wallet? If yes, why? What does it give you that other wallets don't?

Yes, it has so many great features that others don't. Tons of neat coin selection and change selection stuff in there. My node will properly rebroadcast txs with it too.
If you're using sparrow or specter you're also using bitcoin Core's wallet. It just has a gui on top of it.
Joinmarket?
Bitcoin Core probably has more review than any other wallet. So good chance you are less likely to lose funds on it due to a backdoor or bug.
More room for users errors maybe?
Backwards compatibility and confidence it’ll still be there in ten years (oops lol, not anymore, yay SQLite wallets, guess I’m never upgrading again wheeeeeee)
