Not sure it's huge. Most favor convenience over privacy. Some cypherpunks are even starting to concede that battle from a pod I heard recently (mass interest in privacy). I dunno, just chatting my thought early morning.

Obviously hard to find data on this, but in 2010 only about half the old people had a cell phone. The market is definitely huge and, again, probably bigger than the other market, because while adoption has grown, even the people who had cell phones in 2010 are tired of the problems with them now

2010 a bit dated, but point taken. Assuming reason they don't have one is those you've suggested. Such a device would likely be harder to use (not great for boomer demographic) and I still question assumption that the reasons they don't own have much to do with hardcore privacy concerns, but what do I know really? Not much.
Not wanting a society where everyone is listened to at all times isn't a hardcore privacy concern
