Happy Friday Nostr! To kick off the weekend I'm sharing one of my favorite breakfast recipes:
Savory Oats
A wholesome, palatable, and easy to make high-fiber meal that can be had for breakfast, lunch, or dinner.
Removes the sugar commonly consumed with oats and provides a good dose of healthy fats.
Think of the oatmeal as a healthy rice substitute.
Instructions:
1. Chop the kale, tomato, and avocado
2. Add cooking salt to appropriate amount water and bring to a boil
3. Add oats to boiling water; oats should be cooked until fluffy; add kale to oats 2 min before removing from heat
4. Strain the cooked oats and kale if they appear soupy
5. Place in a bowl, sprinkle or mix in the tomato and avocado
6. Season with tamari, soy-sauce, or Braggs
7. Add a dash of nutritional yeast and a drizzle of olive oil and serve
Variations:
• Add or substitute feta for the nutritional yeast for a richer cheesy flavor
• Add or substitute MCT oil for olive oil if EVOO is too sharp for your palate
• Add a dash of lemon or lime juice for extra zest
• Salt can be substituted for tamari or Braggs, but the dish will have less umami flavor.
