Def. Although I'd probably sub the Swiss out for a cheese with more bite

Swiss is lower fat, so it fits what I'm going for here.

Aged Swiss has some bite to it, but not much.

When you say lowfat, and ghee in the same recipe is it you are using a teaspoon of it?

1 tbsp of goat ghee only 14g of fat.

I'm using probably 1/2 that.

Sounds like too much water was lost. Toss in a water, transfer to pyrex, then microwave. Add an additional cup of water to the bottom of the bowl to prevent too much dehydration.
