Since it is hot chocolate season. Let me share with you a simple hot beverage recipe from the Caucasus.

It’s called Qalmaq Shay. It’s a special herb there, but many just use regular tea.

It does sound crazy, but it’s very cold there, so it does give you a lot of energy and warmth.

We start with tea, but it usually concentrated. (Think espresso shot)

Then add hot milk, a little bit of salt, black pepper, and butter.

Of course don’t put too much salt or pepper, it throws off the drink very quickly. Start with a little adjust to what you can handle and like.
