I know youโ€™re in California, and I donโ€™t know what kind of maple trees you have out thereโ€ฆ but itโ€™s worth mentioning that you can make maple syrup from maples that arenโ€™t sugar maples.

Acer saccharinum and Acer negundo, silver maple and boxelder, are two examples Iโ€™ve heard of which thrive in the area Iโ€™m from, which is much much too warm for sugar maples. There are probably even more maples that will work.

You need more sap to make it but they still make syrup.

You can also make syrup from birches and hickory trees, but itโ€™ll taste different, of course.

You also have to look out with birch syrup because 1. It burns easily and 2. It contains xylitol which is deadly for dogs and cats to eat

Yeah I have no maples.

I have a while garden no maples.

But if I could make syrup out of pomegranate I would definitely try๐Ÿคท๐Ÿฝ

For now I'll have to settle for the cologne I made from various things in my garden.

I think you get pomegranate molasses by gently reducing pomegranate juice until itโ€™s thickened.
