tbh i don't know github's privacy practices very well. i'm probably just paranoid
I guess your like the majority who does not read terms of service & privacy policy. If you did you would know & if you have concerns you would be hosting your own gitea.

I make a little software for my "world." git and its server repos help me keep track of my own small personal development. I'm long past being a pro software developer back in the days of svn.
I only use github to download and browse anonymously sometimes. I occasionally log in over VPN+tor to make comments or issues
