Seed saving to me is even more motivating than eating the harvest. Few people ever see the full life span of there vegetables.

Paper sleeves and a pencil. Save only from the best fruit/veg/herb and only from the best plant.

My favorite seeds to save are carrots because the flowers are so dang cool 😎

For melon, cucumbers, I generally let them soak in water for a few hours, try to spray off the membrane. Then place on paper towels to dry up.
