have you looked into android with #grapheneos? snowden uses it. i recommend it over iphone and stock android any day.

Why not just reduce sueface area (delete 90% of the stuff) - why not just mske it super simple ?
And make it '$5 wrench' force unlock proof, aka you can be confident you can just hand it over to anyone and be 100% fine in every way.
