I often read about that's possible to read out your IP address when you write a note?!

You have no understanding of IP or general networking. Why don't you start there? There are many videos on YT.
I hope I didn't sound offensive. I truly believe in nostr and hope that it's gonna blossom well. But for me as a non-tech it's hard to understand when people here in the #nostr space are explaining everybody should run his oh relay or that you should use tor behind nostr for higher privacy security.
For me a as a normal user who uses #amethyst it would be comfortable if that privacy needs are set by default, so I don't have to worry about anything. 🤔🤷🏻♂️
