Sap emitting from a tree trunk usually is a sign of injury or just bad health. Obviously that tree had a history of injury. The sap attracts all kinds of insects, sounds like a process of decomposition.
Yea still just decomposing makes sense. I heard maybe paint in tar? Maybe that just seals all that in. Sounds old school

I dont think you need to do anything, just let it rot over time. If you want to speed it up, you could drill some holes on top and pour some dried molasses or sugar in the holes. This will speed up the decomposing process, but not necessary.
