- Rolled crêpe with smoked salmon mousse

- Duck and foie gras tartellette or lobster and crab, bisque mousse mille feuille

- Foie gras and truffle raviol

- Fried fugu with passion fruit sauve and spinach or sea beam, scallops and prawns bouillabaisse

- Beef fillet, morel sauce and d'arfin style potatoe or chicken and deer ballotine with truffle and red wine sauce, chestnut puree

- Butter roasted apple and goat cheese

- Caramel bavarois, chocolat biscuit with custard and chocolat sauce.
