2 water right full as hot as the tap will go

thumb width of lard or 1 inch of block

melt lard in water

add 2 table spoons of sugar

1 table spoon of traditional yeast

leave for 20 min until foaming

add 5 of flour almost full and 2 tsp of salt

mix well, get in there with your hands and really work it. leave it for 40min then punch and knead, leave it for another 40 min, punch and knead again, leave for another 40 min punch knead and spank the air bobbles out then fill bread pans 1/3 to 1/2.

and form buns.
